Main Ingredients: Black gram flour, sugar, cloves, cardamom, saffron Optional Ingredients: Edible camphor Imarti or Jhangiri is a popular sweet made from a special variety of black gram flour called Vigna Mungo or Jhangiri Parupu, which is soaked for a few hours and ground into a fine batter. The making of this sweet requires a little skill as the liquid batter is squeezed out of cloth cones directly into hot oil or ghee using a specialized hand movement that gives this sweet its distinctive shape, similar to funnel cakes. The fried product is dipped into a sugar syrup flavored with cloves, cardamom, saffron, and occasionally edible camphor. This causes the sweet to absorb the syrup and plump up. The sweet can be eaten hot or at room temperature; sometimes, a spoon of Rabadi is poured over it to complement the taste.
