Appalams are the most included side dish in an everyday South Indian home to add crunch to their lunch. To make these Appalams, frying in a pan with oil for a few seconds is all it takes. The disc-shaped appalams are made from well-dried urad dal. To make this, the urid is first soaked and ground with water, then cut into shapes and left to dry. The appalams are dried in the sun until all the moisture has evaporated. They are then sprinkled with some flour to absorb even more moisture and wrapped.
